Located in Yurihonjo, Akita Prefecture, Hakko Koji Taya is a cafe and shop operated by Saiya Shuzo, the brewery of Yuki no Bosha sake. This charming spot offers a taste of Akita's fermentation culture with a menu featuring sake kasu (sake lees) and koji-infused dishes and sweets. Visitors can also enjoy homemade bread made with sake brewing water and chicken marinated in salt koji. The adjacent shop sells a variety of sake, fermented foods, and local products. Don't miss the renovated kura (storehouse) which houses the Yuki no Bosha gallery and restrooms. Open from 10:00 to 17:00 (shop until 18:00), closed on Thursdays.
